    Ah. Brown sugar is brown because of, wait for it…. Molasses. Hence my assumption. I don’t like heavy doses of molasses myself either.

    I know. It's probably more complicated, but, my understanding is that molasses + sugar = brown sugar. I realize this is sort of the reverse of how it really works. I don't know exactly what gives it that amazing flavor, though. It's almost magical!

    Dammit, I couldn't resist...

    Actually, molasses is the first stage of making sugar. They crush down the sugar cane or sugar beets, and extract the juice. Then, they boil it down. Molasses is the first "stopping point", where they can extract it as is, should they desire. They, they put it in a machine that spins the molasses down. First step is dark brown sugar, then brown sugar, then white sugar. Depends on how long they spin it, which removes the molasses. The so-called "Natural" sugar is in the sequence someplace. Just after brown, just before white, iirc. I may be wrong on that one though.

    Honestly, ever since I was a kid, I've absolutely loved the sugar cane. It sells in store all over Hawaii, or if your timing is right, the field workers will cut you off a section. If you ask them nicely. Often a small gratuity has a beneficial effect, too.
    My parents tooks us to Hawaii, or some other island in the south Pacific, every winter for vacation. Since dad was an airline pilot for UAL, the tickets only cost us the tax on the regular ticket price. We had to fly Space Available, but it usually wasn't a big problem. Anywho, most of the islands grow sugar cane, so it was always available for us kids. 2nd best part of vacation, after snorkeling/scuba diving. :)

    You need a knife of some sort, to peel off the outer skin. Since I carried a Swiss Army knife an old man I used to worship gave me before he died, I always had a knife.
    Anywho, you peel off the outer skin. It's much like any other cane. It's a form of Bamboo. Peel off the outer skin, easy to do from the cut ends, and chew the inner pulp. I always peeled the skin, and then used the knife to cut the inner pulp into sections that fit my mouth. It has a sweet, sugary juice in it, and when you chew it, it is released into your mouth. Once you get all the juice out of it, spit out the pulp that's left. It's definitely an "outside" food!

    It's a lot like chewing honeycomb. Nature provided candy, essentially.

    This is for 2 racks of St Louis Ribs. I’ve never tried this outdoors, as this is my indoor recipe.

    2 Tbsp Kosher salt
    1 Tbsp fresh ground black pepper
    2 Tbsp packed light brown sugar
    4 tsp minced fresh rosemary
    1 Tbsp ground fennel seeds
    1 tsp red pepper flakes
    1 tsp granulated garlic

    Tweak it as needed. Enjoy!

    I use that heavy whipping cream in my coffee. YUMMY!
    Makes it rich, and creamy. Especially with a little cocoa powder added too. Cafe Mocha is delectable.
    Certainly much better than coffee that's sat in a 30 cup urn over the weekend, like I used to get when I was on "mid crew" in the Corps. Throw a cup full in the microwave to last until the urn has cooked. Better than NO coffee...
