    At the lake

    2019 Barc. Red TRD ORP
    After 23 hours at 225F dome temp this 8# bone-in shoulder told me it was ready (about 192F internal temp), it broke apart as I grabbed it with both hands and moved it to the foil to wrap it and let it rest.
