So I currently have 265/70/r17 tires and a 3" suspension lift.

Will I be okay to put 265/70/r16?
    I do not off road

Would it be better for example to go 265/75/r16 to make up for the inch in rim size? Or 265/80/r16?

You'd have to make sure the 16" rim would clear your brake calipers. Hopefully someone will be along shortly to clarify that.

And that's why I figured I'd ask here...the shop said 16" is the right size and most sites configure to 16" when I select the 2000 4runner limited, I'm just curious since mine came on 17"

265/75/16 will be about the same diameter as your current wheel/ tire setup.
265/80/16 would be one inch taller. Also, I am not aware of a manufacturer making/ selling this size.

Edit: 265/70/16 would be one inch shorter than your current setup... No bueno.

I'd recommend the 265/75/16 assuming the wheels clear your brake calipers.

Go with SL 285/70/17 and go with TrailSpecial22 said. The 285’s I’m running I feel no power loss.

I wanted to go down a wheel size
All the research points to NOPE

    grinding calipers
Maybe 1 or 2 special wheels that might work but still with mods

supposedly won’t happen or not worth it

    just gonna go with 255/80/17

So, you have a 2000 Limited. The factory tire/wheel setup indeed is 265/70 R16 on the OEM alloy wheels, that's how mine was set up.

Going from 265/70 R17 to 265/75 R16 is a direct diameter matchup. So, if you're happy with the way your rig currently performs then it's a wash and any clearance issues are moot. Switching to stock configuration, obviously you loose an inch but gain some improved MPG/acceleration...but on a 3" lift the 'visual' aspect may not be appealing, your call there.

I've never seen 3rd Gens with 80 profiles on 16s but I have seen set-ups from stock 265/75 R16 on OEM alloys to beastly 285s on 16" Pro Comps, FJ Cruiser wheels...but its a foregone conclusion you'd need to regear.
