I'm looking to pick up the front of my 03. Any reason not to do bilstein 5100 with the stock springs? Any better choices that are close price wise? Will I be wishing I went the next size up if I do a winch up front in the future?

Bilstein 5100 are great. but the moment youre fixing to add any 'thing' of 60-100+ lbs hanging off the front youre going to wish you had installed the right suspension beforehand 100%... Dobinsons or Eibach or OME have probably every spring rate you could imagine and are well priced. take your pick
