We have a new 2021 4R and want to take advantage of the electrical plugs. Any tips on what works and how to's?

I'm wondering about small appliances or microwave.

Remember you're limited to 400 watts, with the engine running. If you can find a microwave with low enough wattage you could run it, but it would be pretty small.

I've used a drill, but only drilling plastic so no huge load. Even small appliances often pull more power than you'd think, just check manufacturer spec

Look at the UL label on whatever you want to run. If it is under 400W then most likely the invertor can handle it, although some devices draw more power at startup and then "settle down" to under 400W; in which case you can't run it. Things like coffee makers, hair dryers, etc... won't work. Microwave; negative. Generally I would consider the outlet to be for extremely low wattage devices like chargers, a very small air pump (for a mattress, not a tire), that sort of thing. On the plus side, you aren't out anything if you try to run a device and it draws too much power. The invertor will just shut down; you'd then need to turn the truck off and back on to reset it. You won't damage anything by trying.

They sell a cool device called a “kill-a-watt” that’ll quickly and easily measure the actual draw of appliances...I’ve taken to putting the 600-800 watt devices I’ve found (Coffee pot, microwave, slow cooker etc) into the goal zero with that plugged into the rear outlet where I did the 400 anytime mod...works well

This is probably the most practical way to use the outlet; battery pack does the heavy lifting, then the truck tops it off.

You cant really power anything from the AC outlet since it's 400w when in park and 100w while moving. You can mod it to do 400w while moving.

When camping I use a 1,000 watt battery station to power an electric kettle for coffee in the morning and then charge anything else. Sometimes a Starlink.

I charge the battery station with the DC cigarrette outlet in the back when "overlanding". The battery does not like the AC outlet. In short. I don't use the AC outlet.
