I am looking at getting some new wheels and tires. I realize that I will have to do some mods to fit this setup but was wondering if it was possible without a lift or spacers. The rims are XD 18in rims (6x5.5 or 6×139.7mm) and Toyo 285/65/18 extreme A/T II tires.

I don't know about the 18's... with a 2" Fox kit on mine 285's rubbed full crank left turn... I can only imagine stock suspension.... and 18's??? I am not an expert...

Without the lift and spacers, you will have some serious rubbing on the plastic parts. I don't think you would need to mess with the cab chop or anything.

Side note, I think the tires will simply be too tall (radius) from the rim unless you have a lift. And you would also have no space to compress the shocks. I have those exact tires...
