I did a thorough inspection of my 05, 4wd, V8 and I noticed at the drive shaft seal (in the middle) flung grease underneath. Question is, should I order an OEM drive shaft, or is there a reliable aftermarket drive shaft I should get?

Unless there is up/down play in the slip joint there, you shouldn't need to replace the driveshaft. Grease flinging out there isn't unusual and is often caused by over greasing the slip joint. That grease looks pretty fresh too. No play there, I wouldn't worry about it.
