Would a Dobinson comfort twin tube or a Ironman Foam Cell rear work well with the 6112 fronts?

Most people seem to go with a Bilstein 5160.

Your 6112's are digressively valved and you're probably going to want to match those with a digressive rear shock as well.

I believe Dobs are progressively valved.

Not sure about Ironman, but I think they are digressive. Double check this. If so, they will work fine.

I know Eibach shocks are digressive and those will work great too.

Noob seeking advice.. so I’m assuming you need 1.5” front, 1” rear wheel spacers to run stock TRD OR 17x7.5 wheels on 285/70/17 tires when installing Eibach 2.0 suspension kit?

You don't need wheel spacers. OR wheels and 285's will work fine without them (actually less chance of rub without).
