    A customer gave me a pork butt as a tip last week so I got the smoker going while I get order some parts for the 4Runner. So glad it's getting nice out again.20210418_115331.jpg 20210418_115341.jpg

    Thanks man, I'm hoping it comes out good too. I haven't smoked a pork butt in awhile, hopefully I still got it. I'm in Omaha as well. Grew up in Millard, moved to Colorado for 6 years, then I moved back to Omaha in 2018.

    We did a 9.5# butt on Easter. I put it on to cook around 1am because I expected it to take a loooooooooooooong time at 250F. I left instructions to watch the temps and wake me up when it hit 195F. To my shock, the wife came and got me about 6 hours later. I figured it out: I'd left all the grates open on my smoker after I cleaned it. We let it rest in the house for another couple of hours and I flipped Keto the bird for the day and had it with the Hawaiian burger rolls.

    My wife, saint that she is, managed to find a zero-sugar barbecue sauce at Costco that actually is pretty decent - not too sweet, lots of flavor, NO SUGAR.

    Smoking isn't work. It is fun! I like making my own jerky, turkeys, roasts, chicken... tonight is a 1.88# porterhouse in the green egg. I come from a family of butchers and cooks.
    I can cook & drink! Lol

    It is fun, but when everything that comes off a smoker tastes so good, your meat budget gets expanded quickly. :D We did a 24# turkey the first year we got the GMG - spatchcocked it and it was done in about 6 hours. The breast was more like the consistency you get from a good quality deli turkey breast: tender and the furthest thing from "dry" you've ever had. After that, I was roped into cooking the turkeys for the last 6 years :eek:
