2019 OR, factory shocks feel soft and nose dives during braking. Heard that upgrade to Bilstein will give it a more solid ride. No plans for lift, maybe just tire increase from factory. Any thoughts? Opening a can of worms?

The worms in that can are good ones. This is a common upgrade for the oem shocks' performance you describe above. Go for it! Also look at Eibach, their offerings do the same thing, are comparably priced, may be more available right now, and a lot of owners who have had both prefer Eibach.

My 2019 OR with Eibach front struts set at .85 (2nd snap ring setting) and rear shocks, with 265/75-17 Falken Wildpeak tires:

Bilstein 5100's was checking out for myself. But heard strong reviews on the Fox 2.0 ones, great for offroading plus rebuildable just bit more pricey.
