    It has been sitting in brine all day. Got some good new applewood chunks for the egg & a convEGGtor for indirect cooking (been meaning to buy). More pictures to come tomorrow.

    Finally awoke from my tryptophan nap & remembered to post pics.
    Our first attempt turned out great! 3.5hrs @ 225° & 160° inside produced this...

    Went simple with salt/pepper/garlic salt and butter under the skin. Spatchcocked it for faster times. Smoked with applewood on my Weber Summit Charcoal.

    We brined it for a day & smoked it with a pan of brine under it. Some of the turkey was so moiste it was like it was poached!

    Not my work that’s the Major General’s bird. We got him an electric smoker for Christmas a few years ago and he has perfected it. 3B6B739A-C402-457B-B953-FC4BBE3B5D71.jpg The other bird turned out perfect too.....Home made breads and pies....OMG I’m very thankful....

    It has been so cold (2.5 weeks ago it was -20) I haven't been able to grill or use the egg. Tonight will be different! After a sewer backup earlier this week my wife took me to get a good steak for dinner.
    We found this beautiful 2.02# porterhouse @ Fareway meats. That is a platter not a plate!

    What a phenomenal steak! Best I have had in a long time. This butcher shop is awesome. They have a little bit of everything. A few bucks a pound more than the grocery stores but way better quality.

    I am glad you are liking your green egg. My son-in-law and I are both BBQ cooks. He has a Komodo Joe and I have a Yoder pellet smoker. My son-in-law smokes more oftn than I do. But smoked meat is the best.

    :bowdown::bowdown::bowdown: That looks phenomenal! Minus the mushrooms I maybe able to make that for my "meat & potatoes" wife. Lol
    I believe we both have the same Weber. Genesis II - 310 or a 3 burner weber. They all cook the same. We still use our Weber a lot I just had to smoke something as our last occasion was Thanksgiving and then it got cold & snowy.
    Any Weber is a phenomenal grill. I could make an excellent meal from their smallest charcoal grill. Always a win!

    Dependiing....5-7# bellies about 1.5.- 1.75 hrs.at around 175-200*....if they are thicker than 1.25"...another 15-30 min.
    I smoke them until internal temp is 155*....i start probing after an hour in smoker..

    That is the brand of pellets I use as well, and I get very good smokes and consistent results.

    It's raining cats and dogs here. I didn't wanna put my pellet grill out in the rain so I grabbed my junky 20 dollar gas grill out of my camp trailer to grill some brats. You haven't lived until you've had a cream cheese filled brat. I had one at a Mariners game years ago and decided it's the only way to eat brats!

    After using my crappy camping grill a couple weekends ago, I realized there was no reason to have a crappy camping grill! Picked up a Green Mountain Davey Crockett. For the size and price seems pretty solid. They are also based out of Oregon which I thought was pretty cool!IMG_20210321_122637937.jpg

    Another nice spring day deserves the use of the smoker. I have been soo busy I just haven't had the time.
    Another porterhouse as that is great for the two of us. I prefer a ribeye but a sale on porterhouses made me get one. The filet was amazing & the strip was great as well.

    Even though we don't have children I though it would be nice to go to a butcher shop and get some dinner for the wife after a long day with the families. The lady got a 10oz nacon wrapped filet & I a 1.5# ribeye. Seasoned with only salt & pepper with a cherry oak blend in the smoker. It turned out phenomenal.
    I am glad we are back in the grilling season here.

    A friend and I occasionally make food for our friends. I do all the smoking and he does the sides. Comes out pretty well, he makes everything from scratch (the cheese, bbq sauce, beans etc.) he ran a kitchen at an upscale restaurant before the pandemic. So he gets all fancy with it. Turns out amazing.
