Prime Dunkers

    At the lake

    So my lovely bride of 30+ years asked me to make prime dunkers (prime rib sandwiches with au jus) and since it's Mother's Day, of course we had them for dinner.

    I started yesterday evening, mixing up the poolish for the fresh ciabatta rolls I would need to serve the sandwiches on.

    Then I had to carmelize some mushrooms and onions

    Sliced up some prime rib from a steak I put in the oven at 125*F until it reached internal temp

    I rendered the fat trimmings of the steak and made a roux, then added that to beef broth for my au jus. I put sliced ciabatta rolls under the broiler with slices of provolone on each half, made some creamy horseradish sauce, and this was what the end result looked like.

    We had a great side of kale salad with this.
