The big green egg and bbq.....

    Enjoy everyone....

    Started yesterday with meat prep. 20 lbs of pork butt/shoulder and 8lbs of tri tip.....

    The process started early at 3am. All the pork went on with the smoke rolling at 220 degrees.

    7 hours later it was time to wrap it up in tin foil.

    Now comes the tri tips on the bbq. I like to sear mine at 600-650 if I can then throw them on for the slow cook for the next 4 hours.

    Hope it's turns out how I want.
