Grilling & smoking...

I lived for a summer in the ozarks of Missouri after high school. Osage beach was my home; mile marker 54. Worked @ a restaurant on the 17 mile mark.
It is not a relaxing place for me. It is a midwest college party place (party cove). I would rather see something astonishing than see drunk people act stupid. I never enjoyed that scene.
Maybe we just need a long trip to Arizona. I loved every inch of that state!

 

The relaxing part of the lake is not the party area, but more where you were staying. From there up to MM 80 near the Warsaw dam is relaxing and family friendly. There are some cool rope swings and cliffs to jump off of along the way. Plus you can have a normal boat without having to worry about getting thrown around by some insane oversized cuddy's wake.

 

..but the real secret is to not go on the weekends. Mon-Fri the whole lake is pretty tame.

 

Shh.... I worked a restaurant's gas dock (on mm17) all summer. Monday thru Wednesday it was a huge calm lake. Thursday thru Sunday it was a disaster waiting to happen. I remember many drunk people running ashore with a lot of people aboard! Just stupid.

 

I did a thing yesterday... and today too.. pics are from today's batch
Bro in law ate majority of yesterday's batch ... so I made more for the wifey .. and me of course !!

Finally a nice night @ home. We are doing a smoked peppercorn pork tenderloin & homemade twice baked potatoes!
It is almost done, I guess it is time to pour a Moscow mule!

 

I log back in after a few weeks to this at the top of my news feed. Ya all instantly just made me starving. Now I’m craving something off the smoker BUT that’s not happening tonight

How fast can you get to Nebraska? We have extra...

I would offer Nebraska (centrally located). However I think driving through cornfields would get old.
Western Nebraska may be cool! There are the sandhills and a few other really cool things...

My high school was surrounded on all 4 sides by cornfields! That’s all you see where I’m at, other than the odd year a farmer cycles in soybean. I grew up playing in those cornfields, corning cars in the fall, racing my buddies blindly from one end to the other in our trucks, and spending spring times after the farmers tilled, picking up arrow heads. I’d feel right at home.

 

You are welcome to come. Let's set up a drive somewhere! It is nearly impossible to find anyone around here besides the (no offense) poser jeep crowd that builds to impress.
I would love to plan even a trip to Colorado, that may draw more people!

A trip to Colorado would be amazing. Not sure how much the wifey would allow me to wheel her DD. She’s OCD with cleanliness so rock ir something that easily comes clean would be fine, if it was mud that’ll fill every nook and cranny, forget it. She won’t even let me drive her 4R through one of our pastures in fear if it getting too dirty.
But she’d go just to meet everyone and hang out for awhile.
As far as I go, I’m old skool hard core wheeler. If ya don’t roll it, you aren’t wheelin hard enough.

 

Trust, this is my wife's daily also. Mud would be my problem to clean (as long as it returns to her clean). Not really a fan of mudding.
More looking for amazing trails we can cruise (we will be stock height for a while with little armor).
Just looking to maybe do some mtn roads/ trails to camp & drink.
We have no timeline. Just that Fall works best for us (not to say it must be fall).
Worth a try/thought.

Not grilling or smoking, but does any one else sous vide? Got one for my birthday last year and they're pretty freaking cool! Chuck roast and veggies at 170 for 24 hrs

No, however I want to & my dad just gave me a few hundred dollars to Cabela's so I will start with a food saver to marinate and go from there.
What are your favorite things? What is difficult to make? Finally, what is easy to start with. I figured steaks would be easy.
I really want to stretch our abilities here.
My wife can cook & bake almost anything with amazing talent. I personally prefer the smoker/ grill & I can do some awesome vegetables on it. We share cooking tasks but she beats me inside.

Steaks so far have been my favorite. I really haven't played with it too much. We basically use for meals we would normally use a crock pot for and mainly in the winter as it's usually not great weather for bbqing in the Northwest. I've done corned beef as well that was pretty easy and turned out really good. My uncle just gave me a bunch of yellowfin from a fishing trip in Mexico. I'd like to try fish in it as I haven't done it yet. It's a pretty fool proof cooking method, just takes awhile. I would say roasts are a good place to start.

Every Valentine's day we have a family pizza cook off. Me and the two year old made a bacon cheeseburger pizza and the 12 year old and mom made a Thai chicken pizza. I cooked them on the smoker this year! Happy Valentine's day all

 

We've had a weird stretch of nice weather so I've been cooking outside quite a bit. Butterflied and stuffed a pork tender loin with cream cheese, bacon and green onion and used a famous Dave's rub. I had to work today so I didn't smoke it as long as would have liked. Ended up smoking it for 2hrs at 200 and finished it off at 350.

 

How did it come out? The wife wants more pics! It is supposed to be 60° here tomorrow, I found a 1.4# porterhouse I am going to smoke tomorrow afternoon.
Today was cleaning the work truck and doing paperwork for end of the year. Tomorrow is washing the T4R & cooking.
For a lawn & landscape owner my hours are going to drastically change! Hopefully more money for mods...
