    Coming from a family of butchers. I really enjoy good food (steaks & meat especially).
    If you work like a dog; you must eat like a king!
    Found some ribeye on sale & decided to smoke it.

    Picked up a new grill a couple weeks ago. Still figuring out but love it. Some Tri-Tip steaks I did when I first got it.

    I grew up eating deer and elk and Idaho free range cattle. Did not really care for steak and never understood why people went nuts over it.

    Then I moved to Iowa and was introduced to a thick ribeye with butter and garlic salt grilled over charcoal. Simply amazing! I've never had so flavorful and tender meat in my life!

    Started using Corky's Seasoning on all my meat. Became a huge fan of ribeye steaks, lol.

    Then I moved back here to the PNW and discovered that the beef out here simply sucks for the most part. I haven't found a ribeye out here that is even close to as good as the ones I could get at the local grocery store chain in Iowa. I've heard that going to a local butcher that uses local grass-fed beef is the ticket, but I don't trust anyone that hasn't had Midwest steaks to know what a good steak tastes like.

    But, my sister-in-law did share with me her secret for tender pork ribs, and last night grilled up some for the girlfriend and I for supper...

    But, when I do buy ribeyes, I try to use the charcoal side of my grill for the best flavor...

    Just picked up a pit boss too!!! Pitboss 1000.

    I'm still a newbie to smoking ... still learning how to control the temp and such... followed some recipes online and damn its salty.. brined in salt, then washed it out.. then liberally coated with seasoning... too salty!!!

    Right on! I have The pro series 820 and absolutely love it. I had an Austin xl before and had a few problems with it and ended up returning it and getting a pro series. I didn't know at the time, but pitbboss makes specific lines of grills for specific distributors. Can't go wrong with the pro series. Especially for the price. I've got mine pretty much figured out.

    My wife just bought me this same one for fathers day! I’m still trying to figure it out. What I’ve discovered so far is that it’s an excellent grill and an ok smoker. Now that’s just me because my wife’s godfather has one and he claims it’s the best smoker he’s ever used. So maybe I’m doing something wrong. But I can’t really control the smoke on it which irks me.

    So from what I've found out the smoke setting changes with the temperature. If you go into the "P" settings you change the amount of smoke cycles at that temperature. For instance you are getting less smoke at 250 than at say 225. You can go into the "P" settings and change the amount of smoke you are getting at each temperature. Hopefully that helps. I ended up taking back the one that I originally posted a picture of and upgraded to the pro series.

    Yeah I’ve adjusted the p setting but it still isn’t enough. And the pro series is what we have. Got it at Lowes. I still love it, just wish the smoke was stronger.

    Have you tried a different brand of pellets?

    I've been using little devil's. They're pretty cheap and I really like them.

    @Allaboutfamily or anyone wanting smoke or more smoke.
    I use this in our gas Weber grill & have great success. I also experiment with different flavor pellets. I have cherry, apple, pear & hickory currently. I can start this with a MAP torch & set one burner on low & it sits right @ 225° depending upon outside temps.

    everything looks great!!

    i usually smoke two turkey breasts for tgiving, but my plans changed this year. i havent smoked anything for a bit! i think i will make the turkey in a couple weeks when my schedule dies down just for the hell of it...and because its delicious!

    Costco pork shoulder about 16lbs of it... and a rack of ribs from Butcher Box...started smoking around 1500... didnt finish pulling pork until about 0200

    That looks phenomenal!
    I was going to rotisserie smoke a bone in turkey breast for the wife & I tomorrow but mother nature is saying otherwise. The instant pot is a good second if I cannot get to the grill. Always moist & ready whenever.
    We shall eat & drink well regardless.
